Boso Lagman (Bishkek Wok-Fried Hand-Pulled Noodles with Crisp Peppers & Spiced Beef) – Authentic Kyrgyzstan Recipe
Unlike soupy lagman, Boso Lagman is wok-charred dry over high flames so the noodles turn smoky and glossy.

Step-by-Step Cooking Instructions
- Cook or soften the noodles/pasta in salted boiling water until just al dente, then drain while reserving 1/2 cup cooking water.

- Add chewy noodles wok-tossed over high heat and thinly sliced beef (or mushrooms), stir-frying briskly for 5–6 minutes until tender-crisp.
